This is a meal I frequently make. The recipe varies slightly depending on what ingredients I currently have. This one was a ‘whatever is in the fridge’ recipe, so feel free to tweak as needed and get creative!
For the ‘tortilla’ I used chard, however you can use any type of lettuce.
I find that romaine and chard work best because of the large leaves.
Now for the taco meat. This is where you can get creative!
I chopped 3-4 mushrooms into small chunky pieces. You can use a food processor as well!
I added kale, basil, garlic, onion, watercress and marina sauce to the mushrooms and mixed it all up!
For spices I used salt, pepper, turmeric, cayenne and cumin.
My base is always mushrooms. Sometimes I just do mushroom and spices, other times I will add herbs, tomatoes, avocado, or whatever else I have on deck.
On the base of the leaf I spread some homemade guacamole (avocado, salt, pepper, lemon.)
Then I added the taco meat, nutritional yeast and some salsa!
If you haven’t tried nutritional yeast it is amazing! I use it on top of most of my meals. It has a great cheesy flavor and is packed with B vitamins!
This is such an easy and fun meal!
It’s a great way to get in a ton of veggies.
